Ingredients

  • 2 eachs Eggs
  • 0.75 cup Sugar
  • 0.25 cup Applesauce
  • 1 tablespoon Molasses
  • 1.5 teaspoons Vanilla
  • 2 cups Zucchini
  • 1.5 cups Wheat flour
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Cinnamon

Directions

  1. Shred and drain zucchini prior to making.
  2. Mix all ingredients.
  3. Bake in 350 degree F oven for 55 minutes, makes muffins or loaf.
